    Super Power Banana

    Super Power Banana Bread

    Family-fav: gluten free, vegan and refined sugar free.

    Equipment

    • Loaf pan, baking paper, sieve, food processor, small bowl, oven.

    Ingredients
      

    • Wet Ingredients
    • 1/3 C Ground flaxseeds
    • 150 ml Almond milk
    • 4 ripe Bananas
    • 100 ml Coconut oil
    • ½ C Coconut nectar or maple syrup
    • Dry ingredients
    • 1 ½ C Gluten free flour
    • ¼ C Ground almonds
    • 1 Tbsp Chia seeds
    • 1 Tbsp Cinnamon
    • 1 Tbsp Ground ginger
    • 1 Tbsp Baking powder
    • 1 tsp Baking soda

    Instructions
     

    • Preheat oven to 180 oC
    • Brush a little melted coconut oil in the loaf pan and line with baking paper.
    • Mix together the ground flaxseeds and almond milk in a small bowl and set aside to gel.
    • In a food processor, blend together bananas, oil and nectar (or you can just mash these together by hand).
    • Then mix in the flaxseed and chia seeds.
    • Sift in all the dry ingredients and mix well.
    • Pour into the prepared pan, finish with a few flaxseeds or sliced banana and bake for 40 – 45 minutes.
    • Test with a skewer that bread is cooked. It should come out clean.

    Notes

    Things to try:
    Add ½ C frozen blueberries to mix.
    Make muffins instead of a loaf.
    Add ½ C chocolate chips to the mix.
    Mix together 4 T cacao powder with 4 T water and add to the wet mixture to make a chocolate banana loaf.
    Add ½ C chopped nuts and/or dates (walnuts, pecans, almonds.. yum!)
